This week many of you would have returned to work and back to boring or worse still, missed breakfasts.Let’s turn that goal killing habit on its butt immediately.Overnight chia puddings are a great choice if you’re busy in the morning and still want a hearty, refreshing breakfast.
This Chia Pudding version is made with cherries but you can easily be substituted with frozen berries. Don’t want to use honey? Try a few chopped dates to sweeten it up!
Chia is one of the highest sources of protein available and it is also high in soluble fibre. With cherries being high in anti-oxidants & in fibre, Vitamin A – the rejuvenation vitamin, potassium, vitamin C and folic acid, you have put this simple meal through to diamond status. Add the good healthy coconut fats and you are going to have a full tummy with a kick-arse nutrient list that keeps you primed with energy and away from hunger for hours.
Cherries are also highly reputed for settling inflammation such as gout, so if you have over-imbibed during your holiday break, this is doubly therapeutic for you. In fact, researchers have found that consuming at least 10 cherries per day reduced the risk of gout attacks by 35%. A combination of cherries and Allopurinol (a medication) is often taken to reduce uric acid, reducing the risk of gout attacks by around 75%.
Overnight Cherry Coconut Chia Pudding
(Serves 2)
Place all ingredients in a glass container and stir well. Cover the container and place it in the refrigerator overnight. When it’s time to eat, place serving in a bowl and garnish with an optional teaspoon of almond slivers.
– You may add a layer of stewed Cherries or one of natural nut butter e.g; Almond butter, in the middle for a little extra delight in every bite!
